I totally get that this isn’t a recipe blog. But it’s not really any one kind of blog. It’s just stuff. And since I’m working on making my dinner list for this week, I thought I’d share with you what I’m making this week. What you have to know about me and my cooking: I dislike cooking, I never use fancy ingredients, and the dinner has to be easier to make and in less time than it takes to get to the closest fast food restaurant and back. Fortunately for us now, the nearest fast food restaurant is hella far away, so *I’ve taken to actually cooking at home (*read “taken to making Lance cook at home”).
Monday: Better Than PF Changs Lettuce Wraps
I have been making these for a while. While there’s a lot of chopping, it’s worth it. In fact, we went to PF Changs and I was thoroughly disappointed. My wraps are better. The recipe and directions are here:
but I’ve tweaked it a little to make it easier to make.
First off, I use a rotisserie chicken instead of cooking up my own. It’s faster and tastier. I use the minced garlic in the produce section. It comes in a squeezable tube and I haven’t been able to taste the difference between that and mincing my own. The small tube of it lasts a long time, too.
We have these with rice and the postickers from Costco. They’re super yummy.
Tuesday: Pizza Rolls
These are AWESOME. They’re super easy, my kids love to help make them and they store well, too. My kids fight over the leftovers. For breakfast. I kid you not.

We serve dip them in the store bought pizza sauce you can find with the spaghetti sauces. We have these with a veggie tray and we’re set.
Really. My kids actually are eating vegetables these days. I’ve told you about this. The worst gas ever.
Wednesday: Ranch House Crock Pot Pork Chops with Mashed Potatoes
When I first made these, Lance and I ate our entire dinner without saying anything. Too busy SAVORING it. Will change your life. The recipe is here.
Just chuck everything in and leave in the crock pot all day. If you don’t want to make your own potatoes, the ones you can buy in the deli are okay, too. The meat is so flavorful that using store bought mashed potatoes isn’t that huge of a deal. If you can get them in the deli, do. If not buy these:
Thursday: Panera Broccoli Cheddar Soup in Bread Bowls.
I’ve tried the copycat recipes. I have yet to find one that tastes as good as Panera’s. BUT GUESS WHAT? They sell a double set of Panera Brand soups at BJ’s. They might have them at Costco or Sam’s Club for those of you that aren’t on the east coast. This is a super easy dinner. We warm up the bread bowls (bought in the bakery of our supermarket) in the oven at 300 degrees for about ten minutes. Put a little bit of olive oil on top.
Friday: Chicken Awesome Soup
This one is my own recipe. For reals even. It’s super fast. Super easy. And I eat it ALL of the time.
1 can of chicken (or shredded rotisserie chicken, or add your own pre-cooked chicken if you feel like overachieving.).
1 can of Rotel Tomatoes (Or two if you’re like me and love them with your whole heart)
1 can of black beans. Rinsed. Or not. I don’t care what you do with your life.
1 ranch packet OR 3 T ranch seasoning (the huge jar is super handy and cheaper than buying the packets).
1 can of corn
1 can of chicken broth, or not. If you want to make it more dip-like, omit this. Or omit it if you don’t have it and just add some water.
Heat. Eat. With chips. I like mine a lot spicier than my family likes theirs, so I dump some hot salsa in mine. I buy the fresh kind in the refrigerated section because it tastes better and makes me feel more like a human.
This post is going downhill. I’m bored. I hate cooking.

I love these crazy things. Serve with ranch and celery. We also make oven baked fries. Like the ones from the freezer. Not the ones you actually cut up and make. That would be time consuming and sad. Eat. Think about upping your workout routine (from nothing to getting off the couch…?). But only imagine it. The couch is so comfy.
Sunday: Do whatever it takes to get invited over to someone’s house for dinner. Or eat all of your leftovers. Or cereal.

My husband will not eat lettuce, beans, tomatoes, or soup. He’s hard to cook for. I might try the pork chops, though. I hate cooking too. Panera Bread sells their salad dressing too, and I love the vinegarette.
THANK YOU for doing a food post. I ADORE reading about what other people eat/cook/serve their families for dinner. LOVE. so much. This made my day. And, I think I may have to try those pork chops. And finally give in and buy some ranch dressing mix. It keeps coming up in things that I want to try, then I don’t because I HAVE NEVER bought dry ranch dressing mix in my life. I only buy ranch dressing for my kids’ friends to dip veggies in. Or to take somewhere because I was assigned it. I think that will have to change. THANKS! 🙂
I love this. Cracking up. I like the do what the He## you want tone. Martha Stewart could use you in her writing! I am impressed you make out your dinner for the week. JUST had the conversation with husband that I am going to start finding recipes like I used to in our old life. So, I think we will be having letttuce wraps one day and those chicken fingers as well. I vote for this being a regular feature. I don’t know if that would be me using you, but whatever. My oldest would jump for joy for the bread soup bowls. He loves Panera soup and bread.
Please post more what’s for dinner posts–I have never read such a great “weekly dinner recipe” type post. Everyone always says ‘this is super easy’ but in reality, they are not easy, or the recipes are not good. I have already tried some of these and all were delicious.

Please I do like cooking but for myself, Garlic paste is an ideal option that reduce chopping needs and all hurdles in way of smooth cuisine making, all you have to do is take out the amount of ingredients as required and put it in food and you are done. Food ready to serve and eat with least efforts, Great…..
